Meatless Monday: Coconut Vegetarian Curry
Curry is one of those things that’s just plain better when coconut milk is involved. (What isn’t though, really?) You could use stock or water for this recipe, but the rich tropical flavor and creamy texture from the coconut milk really take it up a notch.
Some people might not know that coconut milk is actually the mature fruit’s flesh blended with its water, then strained through a sieve. It’s quite magical really, and it’s used all over the world.
The spiciness of this Indian-inspired curry could totally use something sweet as an accompaniment, like one of these cocktails from our repertoire.
What a great idea for Meatless Monday meal. Here’s how it’s done.
